French Coconut Pie

Ingredients

  • 1-8 in pie shell, unbaked
  • 2 eggs, beaten
  • 1/3 c milk
  • 1 T cornmeal
  • 1 t vanilla
  • 1 c sugar
  • 1 t vinegar
  • 1/4 c butter, melted
  • 1 can shredded coconut; about 1/2 to 2/3 c

Preparation

Step 1

Cream sugar, butter, milk; add eggs, meal, vinegar & coconut. Pour into pie shell; bake at 350 degrees for 30-35 minutes until stiff.
