Chocolate Crepes

Ingredients
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 3/4 cup flour
- 6 tsps. white sugar
- 2 tsps. butter, melted
- 1 oz. peach juice
- 1 (3 ounce) package chocolate instant pudding
- 1 tsp. instant coffee granules
- 3 cups heaving whipping cream
- whipped cream for topping (optional)
- walnuts, chopped for topping (optional)

Preparation
Step 1
In a large bowl, mix eggs, milk, water, flour, sugar, melted butter and peach juice. Heat skillet (or crepe pan) to high heat. Place a small drop of batter into pan and swirl it around until it covers the bottom of the pan. When the crepe has browned slightly, flip it to quickly brown the other side. (Note: the first crepe will probably not be usable but the rest should be fine.) Set finished crepe aside to cool. Repeat until all batter is gone, set.
In a medium bowl, beat pudding mix, instant coffee and heavy whipping cream with an electric mixer until mixture thickens.
Once crepes are completely cooled, spoon filling into center of crepes and fold in quarters around the filling. Serve with whipped cream and chopped walnuts, if desired.
