Ingredients

  • 2 cups sliced, peeled peaches or frozen unsweetened peach slices
  • 3/4 c peach or apricot nectar
  • 1 1/2 tsp lemon juice
  • 1/4 tsp cinnamon
  • 1 – 8 oz carton low fat vanilla yogurt
  • Fresh mint sprigs (optional)
  • Raspberries (optional)

Preparation

Step 1

1. Thaw peaches, if frozen. Do not drain. Place peach slices, peach or apricot nectar, lemon juice, and cinnamon in a blender container or food processor bowl. Cover and blend or process till peaches are smooth.

2. If desired, reserve 2 table spoons of the yogurt for garnish, In a large mixing bowl, stir a little of the peach mixture into the remaining yogurt, stirring until smooth. Stir in the remaining peach mixture. Cover and chill for 2 to 24 hours.


3. If desired, garnish each serving with the reserved yogurt, mint sprigs, and raspberries. Makes about 2 ½ cups. (4 side dish servings).
