Ingredients

  • 1 lb. hamburger or chuck meat
  • 2 med. jars hot salsa
  • 2 cans refried beans
  • 2 lg. onions, diced
  • 1 jar jalapeno peppers
  • 1 pkg. 6-inch corn tortillas
  • 1 sm. can sliced black olives
  • 2 bags shredded cheddar cheese
  • dash crushed red pepper flakes
  • salt and pepper to taste

Directions

Dice onions. Put in pot with hamburger. Add salt, black pepper, and crushed red pepper. Cook until hamburger is done. Add salsa, bring to boil then turn down to simmer. Simmer about 20 minutes or until onions are tender. Line Pyrex dish with tortillas, covering ends, bottom and sides. Heat refried beans until warm, adding a small amount of water to blend smooth. Spread hamburger mixture about 1/2-inch thick, add small amount of refried beans. Spread over mixture, add jalapeno peppers, and cover with 1 bag of cheese. Do another layer, same as before but sprinkle sliced olives before adding peppers, then another bag of cheese. Add another layer if desired. Bake at 350 degrees for 25-30 minutes, making sure not to burn cheese. Let stand 15-20 minutes before serving.
