Ingredients
- 1/2 lb (277 g) fettucine, dry
- 1 1/4 cups (300 ml) skim milk
- 1 garlic clove, peeled
- 1/4 cup (60 g) all-purpose flour
- 2 tablespoons (30 g) nuefchatel cheese
- 1/2 cup (50 g) grated Parmesan or Romano cheese
- 1 1/2 tablespoons (25 g) light butter spread
- salt to taste

Preparation
Step 1
1. Cook fettuccine in boiling water for 10 minutes or until al dente. Drain.
2. Place rest of ingredients into the Vitamix container in the order listed secure lid.
3. Select Variable 1.
4. Turn machine on and slowly increase speed to Variable 10, then to High.
5. Blend for 5-6 minutes.
6. Pour over cooked fettuccine and toss until coated.
Variation: Substitute whole wheat fettuccine to increase fiber.
