Ingredients
- 4 egg yolks
- 1-2 tablespoons lemon juice
- 1/4 teaspoon salt
- 1 dash cayenne pepper or hot sauce
- 1 cup butter, melted

Step 1
1. Place egg yolks, lemon juice, salt and pepper into the Vitamix container and secure lid.
2. Select Variable 1.
3. Turn machine on and increase speed to Variable 4.
4. Blend for 15 seconds.
5. Increase speed to Variable 5 and remove the lid plug. Pour the melted butter very slowly through the lid plug opening until the mixture becomes thickened, approximately 30 seconds.
