Ingredients

  • 1/4 cup packed seasoned bread crumbs
  • 1 head cauliflower, about 2 1/2 pounds, separated into equal-size florets (7 to 8 cups)
  • 1 (26 ounce) jar fat-free chunky marinara sauce
  • 2 cups shredded part-skim mozarella cheese (1/2 pound)
  • 1/4 cup grated Parmesan cheese

Preparation

Step 1

Heat oven to 375 F. Scatter 2 tbsp bread crumbs over bottom of an 11-by-7-by-1 1/2-inch baking pan. Top with half the cauliflower. Pour 1 1/2 cups marinara over cauliflower. Sprinkle 1 cup mozarella cheese and remaining 2 tbsp bread crumbs over sauce. Repeat layers, ending with mozarella. Cover with foil.

Bake for 40 minutes. Remove foil. Sprinkle top with Parmesan. Bake 15 minutes or until Parmesan is melted and golden. Let stand 15 minutes before serving.
