Ingredients
- 1 C rice
- 1 small onion, finely diced
- 1 clove garlic, " "
- 1/2 can tomatoes
- 1 1/2 C chicken broth
- 1 C frozen peas, defrosted
- 1 lg. carrot, finely diced & cooked

Preparation
Step 1
In 2 qt saucepan over med. heat in oil, brown raw rice and onion, stirring frequently (7-10 min). Add garlic and cook a minute longer.
Add tomato to rice and cook 1 min, stirring to combine.
Add broth and cook 15 min., then turn off heat and let stand 10 min., covered, until rice is tender.
Add peas and carrots and fluff rice.
Garnish with fresh cilantro or parsley.
