Ingredients

  • 4 eggs
  • 1 t. baking soda
  • 1 ½ C. oil
  • 1 ½ t. cinnamon
  • 3 C. sugar
  • 2 t. (rounded) cocoa
  • 3 C. grated zucchini (about 3-4 medium zucchini)
  • ½ t. salt
  • 2 t. vanilla
  • 2 t. baking powder
  • 3 C. sifted flour
  • 1 C. chopped nuts

Preparation

Step 1

1) Preheat oven to 350.
2) Grease and flour three 1-lb. loaf pans. If using metal pans, you can use Pam.
3) Beat eggs, then add oil, sugar, zucchini and vanilla. Cream all together.
4) In a separate bowl, sift together the dry ingredients. Add to creamed mixture until well blended.
5) Add nuts. Divide evenly among the three pans and bake 1 hour.
