  • 4 slices french bread
  • 15 ounces canned cannellini beans, drained and rinsed
  • 2 cloves garlic, minced
  • 1/2 teaspoon fresh lemon juice
  • 2 tablespoons water
  • 1/8 teaspoon paprika, to taste
  • 1/8 teaspoon salt, to taste
  • 1/8 teaspoon black pepper
  • 1 large tomato, coarsely chopped
  • 2 tablespoons basil, for garnish

Step 1

Preheat oven to 400° F.

Toast bread in oven for 8 to 10 minutes or until lightly browned.

Puree' beans with garlic, lemon juice and water until smooth. Adjust seasonings to taste.

Spread puree' on toast. Top each with a few pieces oc tomato and garnish with basil.
