Ingredients

  • 3 lbs red, green peppers or a combination
  • 3 cups distilled white vinegar
  • 2 cups water
  • 1/4 cup sugar
  • 1 tbsp salt

Step 1

Remove stems, seeds and ribs from the peppers and cut into 1" strips. Set aside. Bring the vinegar, water, sugar and salt to a boil in a large non-reactive pot. Add the peppers and return to a boil, stirring to ensure that all the peppers are heated through. Remove from the heat.

Process in boiling water for 10 minutes. Turn off heat, remove lid and let jars rest in water for 5 minutes. Remove from water and set aside for 24 hours. Cool and place in dark space for up to 1 year.
