White Bean Soup

Ingredients
- 2 cans cannelloni beans
- 1 bay leaf
- 5 tbsp olive oil
- 1 med onion, finely chopped
- 1 carrot, finely chopped
- 1 celery, finely chopped
- 1 can diced tomatoes
- 2 cloves garlic
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- 3 cups boiling water
- salt and pepper

Preparation
Step 1
Heat beans and bay leaf for awhile.
Mash some of beans.
Heat oil, onions until soft, add carrots and celery and cook 5 more minutes.
Stir in tomatoes, garlic and thyme and cook 6-8 min
Pour in boiling water, pour in beans, season with salt and pepper.
Simmer 10-15 minutes.
