Ingredients

  • 1/2 C unsalted butter
  • 1/4 C heavy cream
  • 3 eggs, room temperature
  • 1 1/4 C sugar
  • 1/2 tsp salt
  • 2 tsp finely grated lemon zest
  • 2 tsp baking powder
  • 1 tsp vanilla
  • 2 1/2 C cake flour (not self rising)
  • 6 C mixed berries (raspberry, blackberry, blueberry)
  • 2 T icing sugar

Step 1

Preheat oven to 350. Grease 13x9x2 metal pan; line with waxed paper. Grease paper.

Heat butter with cream over low heat until melted. Cool.

Beat eggs, sugar, salt on high until thick, pale and forms a ribbon when beaters are lifted, about 5 minutes. Add zest. baking powder, and vanilla. Mix on low until blended.

Add 1 1/4 C flour and 1/2 butter mixture. Mix on low until blended. Mix in remaining butter and 1 1/2 C flour in same manner. Increase to medium and beat 1 minute until thick and sticky.

Add berries and carefully fold with rubber spatula until barely combined.

Spoon into baking pan, gently smoothing top. Bake until springy to the touch and tester comes out clean, 45-50 minutes.

Cool completely in pan on rack. Remove from pan.

Just before serving dust with icing sugar. Dress up with unsweetened whip cream and simple vanilla custard sauce.
