Ingredients
- 1 can of refried beans flavored with chili's and lime
- 1 box of no-boil lasagna noodles
- 8 bag of mexican cheddar cheese
- 3/4 of an 8oz container of ricotta cheese
- can of green chilies
- can of corn
- black beans
- 1 lb ground beef if desired
- 2 bottles/pouches of enchilada sauce

Step 1
Rinse the black beans and corn in a collander and set aside. Add 3/4 of the ricotta to a small bowl, season with salt, pepper, garlic powder, cumin and add the small can of chilis. Set aside. Brown the ground beef with a package of taco seasoning set aside. In 9x13 baking dish start out with enough sauce to coat the bottom. Add a layer of noodles. Add a layer of refried beans and the ground beef, layer of Mexican cheese. Layer of Noodles, sauce, refried beans. Top with the beans and corn mixture and add the ricotta and more mexican cheese. Top with more noodles and plenty of sauce. Top with the rest of the cheese. Cover with Foil and bake at 350' for 35 minutes. Remove the foil and back additional 10 minutes until cheese is browned slightly.
