Ingredients
- 2 1/4 cups flour
- 1 Tbsp. baking powder
- 1/2 tea. salt
- 1/2 tea. cinnamon
- 1/2 tea. ground ginger
- 1/2 tea. nutmeg
- 3/4 cup eggnog
- 2 tea. vanilla
- 3/4 cup butter, room temperature
- 1 cup sugar
- 2 eggs

Heat oven to 350 degrees. Coat a 9x5 loaf pan with baking spray or cooking spray and flour.
In a medium bowl, combine the flour, baking powder, salt, cinnamon, ginger and nutmeg. Whisk until blended and set aside.
In a measuring cup, stir together the eggnog and vanilla. Set aside.
In a large bowl, use an electric mixer to cream the butter and sugar until light and fluffy. Beat in the eggs one at a time. Beat in half of the flour mixture followed by half of the eggnog mixture. Beat in the remaining flour, follow by the remaining eggnog.
Transfer batter to the prepared pan. Bake for 45-50 minutes or until the top is browned and a skewer inserted at the center come out clean. remove the coke from the pan and let cool on a wire rack.
