Red chili enchiladas

Ingredients
- Red chili:
- 5-6 Tblsp of chili molido (New Mexico red chili powder)
- 1 lb hamburger
- 1-2 Tblsp flour
- 2-3 cloves garlic (smashed and minced)
- 1 cube chicken and tomato bullion
- 1 lb of chedder cheese
- pinches of salt here and there to taste
- 12 corn tortillas (yellow or white)
- Vegetable oil for frying tortillas and eggs
- 1 med diced white onion
- (optional)
- Spanish rice
- shredded lettuce

Preparation
Step 1
Get a large dutch oven sized pan, and fry the hamburger.
While the hamburger is cooking, mix the chili molido and chicken tomato boullion with 2-3 cups of water.
Prepare garlic. I love garlic, so I use a lot.
After the hamburger is browned, DON'T drain the oil.
Mix the 1-2 Tbl sp. flour into it and stir until no powder remains.
Then add the water and molido mixture, alongside the garlic.
Get it to boiling, then set low to simmer. Simmer for a good .5 hour to 45 minutes. Stirring and taste testing frequently. Adding maybe a tad of water to keep it from getting too thick. You will want to look for a gravy consistency, not too soupy, not too thin.

While that is cooking, put maybe a cup of vegetable oil in a small skillet (or any skillet) and make it hot. When it is at a frying temp, slide a tortilla, one at a time into the oil. Cook them until they puff up, then take it out and put it onto a plate with napkins. Blot if necessary.
(If you don't wish to fry them, its not completely necessary, but it tastes so much better!!!) Just warm up the tortillas in the microwave under a papertowl.

Fry the eggs in the oil used for the tortillas. As many as needed.

The finalle!!!
Prepare plates with red rice, maybe a bed of greens.
Then dip single tortillas into the red chili, position them on the prepared plate.
Sprinkle the tortilla with cheese, spoon a little more chili on top of cheese.
Dip another tortilla in chili and place directly over first tortilla, over the cheese.
Repeat with the cheese and more chili.
Layer it up as much as you like. I usually eat 3 layers, but a man could easily eat 4.
And at last before serving top with a fried egg. (sooo good!!!)
And also diced white onions if so inclined!!!
