This recipe includes Jon's tips for making lefse on an electric lefse grill. This will make about a dozen lefse.

Step 1

Boil potatoes with the skins on. (About 6 or 7 fit on the bottom of the big pot) Don't overcook. Boil about 30 minutes and take out and let cool. They can cool overnight in the refrigerator, but it is not necessary. Peel the skin off the cooled potatoes.

Mash first and then rice the peeled potatoes. It is easier to cut up potatoes before mashing.

Add the salt and melted butter and mix. Slowly add the flour a little at a time and mix with your hands. The potatoes will begin to form together. As they do, l form it into a loaf. It is best not to add too much flour because you will add more when you roll it out. You will be able to tell if it needs more flour if it's too sticky when rolling it out.

Out of the potato loaf, scoop up about an egg size piece to roll out. Use ample flour on the canvas board and also put some on your rolling pin. Pat it out, sprinkle a little on top of the pat and begin rolling it out. Roll it about half way and sprinkle a little more on top and then flip it over and continue to roll it out. It will be about 9-10'' in diameter. It is thin enough when you can see the red markings through the lefse as it is rolled.

Remove the rolled out lefse from the canvas board with a lefse stick and place on a clean lefse grill preheated to about 450 degrees. It will begin to bubble up and that is time to check it to see if it is lightly browned. If so, turn it over for a few seconds to brown the second side. The grilling process will take about a minute, give or take a few seconds. It is better to undercook than overcook. Cool the lefse between two dish towels.

Clean the lefse grill with a paper towel between each grilling or the flour will burn on the grill. You can start to prepare the next lefse for grilling as the prior one is being grilled. Best to set a timer so you remember to check the one on the grill before it burns.
