Ingredients

  • 1 pound boneless chicken breast, sliced 1/2 inch thick
  • 10 ounce can diced tomatoes (with green chilies if you like)
  • 1 sweet onion, cut in half and sliced
  • 1 red bell pepper, cut in half and sliced
  • 2 tablespoons oil
  • 1 packet fajita seasoning mix ( mild or hot according to preference)
  • 6 taco size flour tortillas

Preparation

Step 1

Preheat over to 400 degrees. Mix together chicken, tomatoes, onion, and bell pepper in a greased 8 x 8 inch baking dish. Drizzle oil and sprinkle fajita seasoning over chicken and vegetables; toss to coat. Bake 30 minutes or until chicken in done. Warm tortillas. Serve chicken mixture in warm tortillas. Serve with cheese and sour cream.
