Ingredients
- 1 1/2 cups dry beans, soaked
- meaty bone or bones
- 2 quarts cold water
- salt and pepper to taste
- 1 bay leaf
- 1/2 tsp crumbled thyme
- 1/4 tsp crumbled marjoram
- 1 chopped onion
- 1 carrot, chopped

Preparation
Step 1
place bone in a large kettle, add cold water and heat to boiling. skim before adding soaked beans, herbs and seasonings. bring back to a boil, lower heat and cover. simmer gently for 2 hours or until beans are tender.
take out bone, remove meat, cut up and add to soup along with onion and carrot. cook 30-40 minutes longer.
add canned broth and tomatoes if desired to thin soup to desired consistency. adjust seasonings to taste.
makes 8 or more servings
