Chicken Quesadillas with Apple and Brie

Ingredients
- 1 large spinach tortilla or wrap, herb flavored if available
- 1 tsp peanut or sesame oil
- 3 oz roasted, skinless chicken breast, thinly sliced
- 2 oz sweet crisp apple, thinly sliced and then sliced into semi circles (about half an apple)
- 2 oz Brie cheese, including rind, thinly sliced
- 2 tbsp honey mustard

Step 1
Heat the oil in a large skillet or saucepan and place tortilla in the pan. Arrange Brie evenly on the tortilla and let it begin to melt. Cover one half of the circle with the chicken and fold to close. Flip semicircle over and cook until slightly golden. Remove from heat, carefully pull tortilla open, drizzzle with honey mustard and top with apple slices. Fold to close and cut in half to create two 45 degree triangles.
