Ingredients

  • ● 1/4 cup chopped onion, optional
  • ● 2 Tbsp chopped green pepper, optional
  • ● 2 Tbsp oil
  • ● 2 cup cooked rice
  • ● 1 5oz water chestnuts, thinly sliced, drained, optional
  • ● 1 3oz sliced mushrooms, drained
  • ● 2 Tbsp soy sauce
  • ● 3 eggs, beaten

Preparation

Step 1

Cook and stir onion, green pepper in oil til tender. (I don't use onion and pepper, but still heat oil before adding rice. )
Stir in rice, water chestnuts, mushrooms, and soy sauce ( I don't use water chestnuts).
Cook over low heat 10 min. stirring frequently.
Stir in beaten eggs.
Cook and stir 2-3 minutes.
