Poppy Seed Chicken

  • 2 large chicken breasts
  • 16 oz container of sour cream
  • 2 cans of cream of chicken soup
  • 1 pack of ritz crackers
  • 2 tsp poppy seeds
  • 1/3 cup butter
  • 1 1/2 cup rice

Step 1

Boil chicken breasts until fully done.

Mix sour cream and cream of chicken soup together into mixture.

Crumble package of crackers into small pieces. Melt 1/3 stick of butter in the microwave.
Preheat oven to 350 degrees.

Dice chicken into small chunks into the casserole dish. Spread sour cream and soup mixuture over chicken, completely covering it.

Pour melted butter evenly over crackers then sprinkle cracker pieces all over the top.

Sprinkle poppy seeds all over.

Bake 30 minutes, until crackers are golden brown.

Cook rice according to package directions - 1 1/2 cup rice, 3 cups water, 1/2 tbsp butter or olive oil, bring to a boil, stir, cover, simmer for 20 minutes, remove from heat and let sit covered for 5 monutes before removing lid to stir to fluff.
