- 2 2 2 TB SUGAR
- 1/2 1/2 1/2 CUP WARM WATER
- 2 1/4 2 1/4 1/4 TSP ACTIVE DRY YEAST
- 1 1 1 CUP MILK
- 3 3TB 3TB BUTTER, SOFTENED
- LARGE LARGE EGG, BEATEN
- 2 2 2 CUPS ALL-PURPOSE FLOUR
- 1 1 1 TSP SALT
- 1/4 1/4 1/4 TSP GROUND GINGER
- 2 3/4 2 3/4 3/4 CUPS ALL-PURPOSE FLOUR, APPROX
- CORNMEAL, SPRINKLE
- 10 TO AND WARM WATER TOGETHER IN MEDIUM BOWL. SPRINKLE YEAST OVER TOP. LET STAND 10 MINUTES. STIR TO DISSOLVE YEAST.
- HEAT MILK AND BUTTER IN SMALL SAUCEPAN UNTIL LUKEWARM. STIR INTO YEAST MIXTURE.
- ADD IN EGG.
- MEASURE FIRST AMOUNT OF FLOUR, SALT AND GINGER INTO LARGE BOWL. ADD YEAST MIXTURE. STIR.
- TO USED A GLASS CUSTARD CUP FOR CUTOUT AND USED SISSORS TO CUT ROUND. NICE SIZE.
- 2 2 MUFFINS: USE 2 CUPS WHOLE WHEAT FLOUR AND APPROX 2 CUPS ALL PURPOSE FLOUR.

2 CUPS ALL-PURPOSE FLOUR

2 ¾ CUPS ALL-PURPOSE FLOUR, APPROX
CORNMEAL, SPRINKLE
SITR SUGAR AND WARM WATER TOGETHER IN MEDIUM BOWL. SPRINKLE YEAST OVER TOP. LET STAND 10 MINUTES. STIR TO DISSOLVE YEAST.
HEAT MILK AND BUTTER IN SMALL SAUCEPAN UNTIL LUKEWARM. STIR INTO YEAST MIXTURE.
ADD IN EGG.
MEASURE FIRST AMOUNT OF FLOUR, SALT AND GINGER INTO LARGE BOWL. ADD YEAST MIXTURE. STIR.
WORK IN ENOUGH REMAINING FLOUR UNTIL DOUGH PULLS AWAY FROM SIDES OF BOWL. TURN OUT ONTO FLOURED SURFACE. KNEAD 3-5 MINUTES UNTIL SMOOTH AND ELASTIC. PLACE IN GREASED BOWL, TURNING ONCE TO GREASE TOP. COVER WITH TEA TOWEL. LET STAND IN OVEN WITH LIGHT ON AND DOOR DCLOSED FOR ABOUT 1 HOUR UNTIL DOUBLED IN BULK. ROLL DOUGH A SCANT ½ INCH THICK ON LIGHTLY FLOURED SURFACE. CUT INTO 3 ½ INCH ROUNDS.

SPRINKLE CORNMEAL ON WORKING SURFACE. SET EACH ROUND ON CORNMEAL PRESSING LIGHTLY. TURN AND REPEAT. BREASE HEAVY FRYING PAN OR GRIDDLE THAT IS HEATED TO MEDIUM. BROWN CIRCLES SLOWLY ON BOTH SIDES, ABOUT 8 MINUTES PER SIDE. PAN SHOULD NOT REQUIRE GREASING BETWEEN BATCHES. MAKES 1 DOZEN.
WHEAT ENGLISH MUFFINS: USE 2 CUPS WHOLE WHEAT FLOUR AND APPROX 2 CUPS ALL PURPOSE FLOUR.
