Ingredients

  • 1 small acorn squash, halved, seeded and cut into 1/2" thick slices
  • 1 tbsp. olive oil
  • 2 Tbsp. brown sugar
  • 1/4 tea. cinnamon
  • 1/8 tea. cayenne pepper
  • 1/2 tea. salt
  • 1/4 tea. pepper

Step 1

Heat oven to 425 degrees.

On a rimmed baking sheet, toss the squash and 1 Tbsp. oil. Arrange in an even layer and sprinkle with the sugar, cinnamon, cayenne, salt and pepper.

Roast until golden brown and tender, 20-25 minutes.
