Pecan-Bourbon Caramels

Pecan-Bourbon Caramels 0 Picture


  • 4 (11-ounce) bags caramel bits
  • 1/4 cup heavy whipping cream
  • 2 tablespoons bourbon
  • 1/2 cup chopped toasted pecans



Step 1

1.Line 2 (9x5-inch) loaf pans with heavy-duty plastic wrap. Lightly spray plastic wrap with nonstick cooking spray.
2.Combine caramel bits and heavy cream in a medium, heavy saucepan. Cook over medium heat, stirring often, until mixture comes to a boil. Remove from heat; stir in bourbon (mixture will bubble up). Cool for 5 minutes.
3.Pour mixture evenly into prepared loaf pans. Sprinkle with chopped pecans. Cool completely.
4.Lift caramels from pans using plastic wrap as handles. Discard plastic wrap, and cut into 1x2-inch rectangle
