Old-Fashioned Chocolate Pudding
- 3 ⁄4 cup sugar
- 1 ⁄4 cup cornstarch
- 1 tablespoon unsweetened cocoa powder
- 1 ⁄8 teaspoon salt
- 11 ⁄2 cups whole milk
- 1 cup heavy whipping cream
- 4 egg yolks
- 8 (1-ounce) squares semisweet chocolate, chopped
- 1 tablespoon butter
- 1 teaspoon vanilla extract
1.In a medium saucepan, combine sugar, cornstarch, cocoa, and salt.
2.In a medium bowl, combine milk, cream, and egg yolks, whisking until smooth. Add milk mixture to sugar mixture, whisking until smooth. Bring to a boil over medium heat, stirring constantly, for about 3 to 4 minutes, or until mixture is thickened. Remove from heat; add chocolate, butter, and vanilla, stirring until chocolate is melted and mixture is smooth. Spoon pudding into a medium bowl; place plastic wrap directly on warm pudding (to prevent a film from forming). Chill for at least 3 hours before serving.
