Teriyaki Chicken and Black Bean Rice Bowl

Ingredients

  • 4 chicken breast halves
  • 1/2 cup teriyaki sauce
  • 1 can (15 oz.) black beans
  • 1 1/2 Tbs. fresh lime juice
  • 1/2 tsp. onion salt
  • 1 cup diced red bell pepper
  • 3 Tbs. minced fresh parsley

Preparation

Step 1

Marinate chicken in teriyaki marinade and sauce 30 minutes, turning chicken over several times. Thoroughly cook chicken on grill, 5 minutes on each side, brushing occasionally with additional teriyaki sauce. Cut chicken into slices; keep warm.

Reserving 1/3 cup liquid, drain beans. Blend liquid with next 2 ingredients; combine with beans, bell pepper, parsley, and chicken and serve over rice.
