Ingredients
- 1 package sweetened shredded coconut, divided
- 1/4 cup all-purpose flour
- 1/4 cup light corn syrup
- 1/4 cup sugar
- 3 egg whites
- 1/4 cup Cream of Coconut
- 2 Tbsp. unsalted butter, softened
- 1 tsp. vanilla
- pinch of salt
- chocolate chips or chunks

Preparation
Step 1
Preheat the oven to 350 degrees.
Line 2 baking sheets with parchment paper or coat with nonstick spray.
Mince 1 1/2 cups of the coconut in a food processor. Transfer the minced coconut to bowl.
Add the remaining coconut to the minced coconut along with all the other ingredients except for the chocolate. Mix gently with your hands until well combined, then chill the dough for at least one hour, and up to 24 hours.
Shape a heaping tablespoon of dough around a piece of chocolate, enclosing the chocolate completely. Arrange the cookies on a cookie sheet, spacing them at least 1-inch apart.
Bake until firm and deep golden brown at the base and light golden on top, 16 to 18 minutes.
