Ingredients

  • 1/4 cup butter softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1 TBS lemon zest
  • 3 cups sifted all-purpose flour
  • 1/2 tsp baking powder
  • Pecan topping
  • 1 cup butter
  • 1 cup firmly packed brown sugar
  • 1 cup honey
  • 3 cups chopped pecans
  • 1/4 cup heavy whipping cream

Preparation

Step 1

Bars
In a large bowl beat butter and sugar at med high speed with a mixer until creamy. Add eggs and lemon zest, beating until combined.

In med bowl combine flour and baking powder, sift. Gradually add to butter mixture beating until combined. Wrap dough in heavy duty plastic wrap chill for at least 30 mins.

Preheat oven to 375 Spray 2 9x9inch pans with nonstick baking spray with flour.

Press dough evenly into bottom of prepared pans. Prick dough with a fork. Bake for 12-15 mins or until dough just begins to brown around the edges.

Reduce oven temp to 350.
Spread pecan topping evenly over prepared crust. Bake for 30 mins or until golden brown. Cool completely before cutting into bars to serve.

Topping

In a large saucepan combine butter, brown sugar, and honey. Bring to a boil over med high heat, boil for 5 mins stirring constantly. Remove from heat. Cool for 10 mins. Stir in pecans and cream.
