Orzo and Spinach Stuffing

Ingredients

  • 1/2 cup chopped green onion
  • 2 cloves garlic, finely chopped
  • 1 Tbs. olive oil
  • 10 oz. pkg frozen chopped spinach, thawed, and drained
  • 1/4 tsp. sugar
  • 14.5 oz. can vegetable broth
  • 1 cup water
  • 1 1/4 cups uncooked orzo
  • 3/4 tsp. grated lemon rind
  • 1/2 tsp. leaf marjoram
  • 2 tsp. lemon juice
  • 1/2 cup raisins
  • 1/4 cup pine nuts or almonds

Preparation

Step 1

Saute onion and garlic in oil in large skillet for 2 minutes. Add spinach and sugar; heat through, about 4 minutes. Boil broth and water in large saucepan. Add orzo, lemon rind and marjoram. Simmer, uncovered, until tender, 10 minutes. Stir in lemon juice, raisins, nuts, and spinach mixture.
