Ingredients
- 1/2 cup chopped green onion
- 2 cloves garlic, finely chopped
- 1 Tbs. olive oil
- 10 oz. pkg frozen chopped spinach, thawed, and drained
- 1/4 tsp. sugar
- 14.5 oz. can vegetable broth
- 1 cup water
- 1 1/4 cups uncooked orzo
- 3/4 tsp. grated lemon rind
- 1/2 tsp. leaf marjoram
- 2 tsp. lemon juice
- 1/2 cup raisins
- 1/4 cup pine nuts or almonds
Preparation
Step 1
Saute onion and garlic in oil in large skillet for 2 minutes. Add spinach and sugar; heat through, about 4 minutes. Boil broth and water in large saucepan. Add orzo, lemon rind and marjoram. Simmer, uncovered, until tender, 10 minutes. Stir in lemon juice, raisins, nuts, and spinach mixture.
