Flounder with Crouton Topping

Ingredients
- 2 slices whole wheat bread, sliced into 1/4" cubes
- 1/4 c. finely chopped onion
- 1 tbsp. grated Parmesan cheese
- 1 tsp. dried basil
- 1/8 tsp. dried thyme
- dash cayenne
- 1 lb. thin flounder fillets

Preparation
Step 1
Combine bread cubes, onion, Parmesan, basil, thyme, and cayenne; set aside. Lightly coat broiler pan with nonstick spray. Arrange flounder fillets in single layer on pain. Broil for 4 min. Remove pan from oven. Top fillets with bread mixture. Broil for an additional 5 min. or until topping is nicely browned, checking occasionally to make sure that it does not burn.
