  • 1/3 C. semi-sweet chocolate chips
  • 2 medium eggs
  • 7 T. sugar

Preparation

Step 1

1. Preheat oven to 225 degrees. Line two baking trays with parchment paper.

2. Melt chocolate in glass bowl over boiling water or in microwave.

3. Separate egg whites from yolks and discard yolks. Whisk egg whites with a wire whisk or electric mixture until stiff peaks form. (Try adding a pinch of salt to help them stiffen.) Add a heaping teaspoon of sugar to the egg whites. Whisk in well. Continue to whisk in spoonfuls of sugar until all is added.

4. Drizzle the melted chocolate over the top of the merangue mixture and stir once or twice to marble. Scoop about 1 T. of meringue with a dinner spoon and push off onto baking trays. Make 11 more meringues and bake for 40 minutes. Turn oven off and leave them inside oven for 15 minutes. Take out of oven after 15 minutes and cool.
