Ingredients
- 2 1/2 pounds lean ground chuck
- 1 pound lean ground pork--1 lb. Jimmy Dean sausage (hot/mild) to taste
- 1 cup finely chopped onion
- 4 cloves garlic, finely chopped
- 1 (12 oz) can Budweiser Beer
- 2 (8 oz) cans Hunt's tomato paste
- 1 cup water, distilled
- 3 tablespoons chili powder (to taste)
- 2 tablespoons ground cumin
- 2 tablespoons Wyler's Beef-Flavor Instant Bouillon (or 6 cubes)
- 2 teaspoons oregano leaves
- 2 teaspoons paprika
- 4 teaspoons sugar
- 1 teaspoon unsweetened cocoa
- 1/2 teaspoon ground corlander
- 1/2 teaspoon Louisana Red Hot Sauce (to taste) or tabasco as needed for taste
- 1 can Rotel tomatoes (reg/hot/mild to taste)
- salt to taste
- 1 teaspoon flour
- 1 teaspoon cornmeal
- (1 tablespoon of each as needed to thicken)
- 1 tablespoon warm water

Preparation
Step 1
In a large pan or dutch oven, brown half of the meat, pour off fat.
Remove meat, brown remaining meat, pour off all fat, except 2 tablespoons.
Add onion and garlic, cook and stir until tender.
Add all meat and remaining ingredients, except flour, cornmeal, and warm water.
Mix well.
Bring to a boil, reduce heat and simmer covered for 2 hours.
Stir together flour and cornmeal, add warm water.
Mix well.
Stir into chili mixture.
Cook covered 20 minutes longer, serve hot.
