Ingredients

  • 2 1/2 pounds lean ground chuck
  • 1 pound lean ground pork--1 lb. Jimmy Dean sausage (hot/mild) to taste
  • 1 cup finely chopped onion
  • 4 cloves garlic, finely chopped
  • 1 (12 oz) can Budweiser Beer
  • 2 (8 oz) cans Hunt's tomato paste
  • 1 cup water, distilled
  • 3 tablespoons chili powder (to taste)
  • 2 tablespoons ground cumin
  • 2 tablespoons Wyler's Beef-Flavor Instant Bouillon (or 6 cubes)
  • 2 teaspoons oregano leaves
  • 2 teaspoons paprika
  • 4 teaspoons sugar
  • 1 teaspoon unsweetened cocoa
  • 1/2 teaspoon ground corlander
  • 1/2 teaspoon Louisana Red Hot Sauce (to taste) or tabasco as needed for taste
  • 1 can Rotel tomatoes (reg/hot/mild to taste)
  • salt to taste
  • 1 teaspoon flour
  • 1 teaspoon cornmeal
  • (1 tablespoon of each as needed to thicken)
  • 1 tablespoon warm water

Preparation

Step 1

In a large pan or dutch oven, brown half of the meat, pour off fat.

Remove meat, brown remaining meat, pour off all fat, except 2 tablespoons.

Add onion and garlic, cook and stir until tender.

Add all meat and remaining ingredients, except flour, cornmeal, and warm water.

Mix well.

Bring to a boil, reduce heat and simmer covered for 2 hours.

Stir together flour and cornmeal, add warm water.

Mix well.

Stir into chili mixture.

Cook covered 20 minutes longer, serve hot.
