Ingredients
- Sauce:
- 6-12 Tortillas (depending on size)
- 3/4 pound Ham, thinly sliced or cut in strips
- 1/2 pound Cheddar Cheese, cut in strips
- 7 ounce chopped green chilies
- 4 Tbsp butter
- 1/4 cup flour
- 4 cups milk
- 1 Tbsp mustard
- 1/2 tsp salt
- 1/8 tsp black pepper
- 1/2 pound cheddar cheese, shredded

Preparation
Step 1
1. Place a slice of ham, strip of cheese, and rounded tsp of chilies on each tortilla.*I use 6 Burrito size tortillas, cut in half. Or 4 cut in 1/4 for lower carb. Can use whole smaller tortillas.
2. Roll up and place seam side down in greased 9-13 casserole.
3. Make a cream sauce out of remaining ingredients, it will not be real thick. Pour over crepes. (can refrig or freeze, then bake later)
4. Bake in 350 degree oven for 45 minutes to 1 hour.
*Make 12-16 Crepes
