- 2/3 cups Sugar
- 1 egg white
- 2 Tbsp lemon juice
- 1 Tbsp Light Corn Syrup
- Pinch cream of tartar
- Pinch of Salt

Step 1
In small sauce pan, mix sugar, egg white, lemon juice, 2 Tablespoons water, corn syrup, cream of tartar and slat. Heat over medium low to medium heat, beating continuously with an electric mixer until medium-stiff white peaks are formed and an instant thermometer reads 150°, about 7 minutes. Remove from heat. Beat an additional minute.
