CrockPot: Soup: Mmmm Chicken!

I had a fever. I hate it when my body shuts me down. Worst of all, noone was around to baby or take care of me. :(
The next day, when I didn’t feel like death warmed over…I decided to make a huge crock of the thing I craved the most! ENJOY!!

Ingredients
- 1 1/2 Boneless Chicken Breast
- 1 Red Onion, diced
- 3 Stalks of Celery, chopped
- 3 Carrots, chopped
- Handful of Chopped Parsley
- 1 T Fresh Ginger, shredded
- Zest of whole Lemon
- Pinch of Red Pepper Flakes
- Pinch of Oregano
- Squeeze of 1/2 Lime
- Salt & Pepper
- 32 oz Chicken Broth, Organic
- 32 oz Water
- Lemongrass would have been wonderful, but I didn't have it on hand. Next time, when I plan on this... I'll use lemongrass, skip the parsley and add cilantro.

Step 1
Place all the ingredients in the Crock, and cook on low. Mine was ready in 5 hours.
