Ingredients
- 8-10 boiling potatoes
- 1 (8 oz.) pkg. cream cheese , softened
- 2 eggs, beaten slightly
- 2 tbsp. flour
- 2 tbsp. minced parsley
- 2 tbsp. minced chives
- Salt and pepper to taste
- 1 (3 1/2 oz.) can French fried onions

Step 1
Peel an boil potatoes until tender; drain and put in large bowl of electric mixer. Beat until smooth; add cream cheese and beat again. Blend in eggs, flour, parsley chives and seasonings. Turn into a buttered casserole and spread slightly crushed onions on top. Bake uncovered at 325 for 25-30 minutes.
Serves 8
This casserole may be prepared ahead. Refrigerate until baking time, the onions added just before placing them in oven.
