Low fat Fettuccine Alfredo

Ingredients

  • 12 oz. fettuccine
  • 1 head broccoli cut into florets
  • 1 1/2 skim milk
  • 1 tbsp butter
  • 1 tbsp flour
  • 1/4 cup freshly grated Parmesan cheese, plus extra for sprinkling

Preparation

Step 1

1. Cook pasta according to package instructions.

2. Meanwhile, cook broccoli until tender; 3 minutes. Drain

3. Heat milk and butter in a large sauce pan over low heat and slowly whisk in flor. SImmer until slightly thickened, whisking constantly; 1 to 2 minutes.

4. Remove from heat and stir in Parmesan. Add pasta and broccoli and cook, stirring over low heat until heated through.

5. Top each serving with extra Parmesan
