Ingredients
- 2 pounds dry great northern beans
- 1 tsp baking soda
- 3/4 pound salt pork
- 1 large onion,, chopped
- 1/2 cup vinegar
- 3 tablespoons brown sugar
- 3 tablespoons mustard
- 3 tablespoons ketchup
- 1 tablespoon molasses
- 2 tablespoons worcestershire sauce
- salt and pepper to taste

Step 1
cover beans with water and soak overnight. next morning, add baking soda and bring water to a boil. remove from heat and wash beans thoroughly to remove soda; cover with fresh water. add salt pork that has been cut in pieces and the onion. simmer until tender(could take 2-3 hours)
at this point, the beans are still soupy. add all the other ingredients. pour beans into pans of your choice. use a 9 x 13 inch pan and put the leftovers in foil pans for the freezer.
put salt pork on top of the beans in each pan, cover with foil and bale 325 degrees.. after45 minutes, remove foil and continue to bake another 2-3 hours. remove from oven. beans will thicken as they cool. will freeze nicely
