Ingredients

  • 2 large yukon gold potatoes , washed and dried
  • 6 tablespoons butter , softened and divided
  • 1/2 teaspoon fresh parsley , chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon sugar
  • 1/8 teaspoon garlic , minced
  • 1/4 cup green onion , sliced (for garnish)

Step 1

Directions:

1 Preheat grill to medium-high heat.

2 Spray grill rack with nonstick nonflammable cooking spray.

3 Using a fork, pierce each potato 8-10 times.

4 Rub 1 T butter evenly on each potato.

5 Wrap potatoes in heavy-duty aluminum foil.

6 Grill, covered with a grill lid, for 40-45 minutes, or until potatoes are cooked through.

7 Remove potatoes from grill.

8 Cut potatoes lengthwise into quarters.

9 Grill potato quarters for 2-3 minutes per side, or until lightly golden.

10 In a grill-safe saucepan, melt remaining 4 T butter.

11 Add parsley, salt, pepper, sugar and garlic, stirring well to combine.

12 Brush butter mixture on grilled potatoes.

13 Garnish with green onion, if desired.

14 Serve immediately.
