Ingredients
- Base:
- 4 egg yolks
- 3/4 cup sugar
- 1 cup warm milk
- 2 cups heavy cream
- Caramel:
- 1 1/4 cup sugar
- 3/4 cup cream
- 2 tsp sea salt or fleur de sal
- 1 tbs vanilla

Preparation
Step 1
Wisk together egg yolks and sugar until pale yellow. Pour in milk, put in pan and cook for 3 to 5 minutes or until it coats the back of a wooden spoon. Pour into bowl over ice bath to stop the cooking process. Stir in cream, when cook cover with plastic wrap and chill over night.
Caramel:
Put sugar in pan and cook until turns amber, then add cream, but stand back because it splatters. Place in bowl and add salt and chill over ice bath. Add to the base of ice cream. Add vanilla.
Put in ice cream maker and process for about 30 minutes.
