Ingredients

  • 2 tbsp (30 mL) Indian curry paste
  • 8 bone-in lamb loin chops
  • 4 cups (1 L) packed fresh cilantro, about 1 bunch
  • 1 garlic clove, smashed
  • 1 tbsp (15 mL) freshly squeezed lemon juice
  • 1 tbsp (15 mL) water
  • Pinch of salt
  • 2 tbsp (30 mL) olive oil

Step 1

1 In a large bowl, rub curry paste over all sides of lamb chops. Allow lamb to come to room temperature.

2 Meanwhile, place cilantro, garlic, lemon juice, water and salt in a blender. Pulse until coarsely chopped. While motor is running, slowly pour oil through hole in top of blender.

3 Heat a large grill or frying pan set over high. Generously coat pan with oil. When hot, add chops. Cook, turning frequently until golden and cooked as you like. This will take about 2 to 3 minutes per side for medium-rare and about 3 to 4 minutes per side for medium. Reduce heat if browning too quickly. Remove to a platter. Loosely cover with foil. Let stand for 5 minutes. Serve on warm plates. Drizzle with cilantro pesto or serve pesto on the side.
