Jim's Salmon and Daikon Stir Fry

Ingredients
- 1 6" salmon fillet cut into 1/2" cubes
- 1 piece daikon, about 6" long, cut into 1/2" cubes
- peanut oil
- 2 Tablespoons Lee Kum Kee Chili Garlic Paste
- 1 small bok choy, finely sliced (not the very thick parts)
- toasted sesame oil
- toasted sesame seeds
- thinly sliced scallion tops (only the green portions)

Preparation
Step 1
Heat a tablespoon of peanut oil in a wok. Stir-in the daikon and stir fry until crisp tender, about 2 minutes. Add salmon and stir fry. Add bok choy and stir. Add chili garlic paste and stir. Stir fry until salmon is cooked and bok choy is wilted.
Place on serving plate - sprinkle with roasted sesame oil, roasted sesame seeds, and thinly sliced scallion tops.
Serve immediately.
