Ingredients
- 2 cups low-fat cottage cheese
- 1/2 cup soft whole wheat bread crumbs(about 1 slice)
- 1/2 cup all-purpose flour
- 1/3 cup snipped parsley
- 1/3 cup finely chopped green onions
- 2 tablespoons margarine or butter, melted
- 1/4 tsp salt
- 4 eggs
- 1 tablespoon snipped parsley

Step 1
in a medium mixing bowl combine cottage cheese, bread crumbs, flour, 1/3 cup parsley. green onions. margarine or butter and salt. set aside
beat eggs with electric mixer on high speed for 5 minutes or til thick and lemon colored. gradually pour cottage cheese mixture over beaten eggs, folding to combine.
pour egg mixture into an ungreased 5-6 cup souffle dish or casserole.
bake in an 350 oven for 1 hour.
serve immediately
makes 6 servings
