Ingredients
- 3 eggs separated
- 1 1/2 cups buttermilk
- 8 tablespoons(1 stick) unsalted butter, melted
- 1/2 teaspooon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon plus 2 pinches of kosher salt
- 3 tablespoons granulated sugar
- 1 cup firmly packed dark brown sugar
- 1/2 cup maple syrup
- 8 tablespoons(1 stick) unsalted butter,cut into cubes
- 1 cup roughly chopped toasted pecans

Step 1
Have all ingredients at room temperature. Preheat oven to 200F. Preheat Belgian waffle maker acccording to manufacturer's instructions.
In large bowl, whisk egg yolks. Whisk in buttermilk, melted butter and vanilla. Over sheet of waxed paper, sift together flour, cinnamon, baking powder, baking soda, 1/4 teaspoon salt and granulated sugar. Add flour mixture to yolk mixture; whisk until smooth.
In another bowl, beat egg whites until stiff peaks form. Using rubber spatula, fold half of egg whites into batter, then fold in remaining whites. Cook waffles according to manufacturer's instructions. Transfer to baking sheet; keep warm in oven.
In fry pan over medium-high heat, combine brown sugar, maple syrup, butter and 2 piches of salt. Heat mixture, stirring when butter begins to melt. Continue to cook, stirring, until syrup is smooth, about 4 minutes, then stir in pecans. Remove from heat. Spoon syrup over waffles; serve immediately.
