Ingredients
- 2 cups Flour
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 3/4 cup Butter
- 1 1/2 cups Dark brown sugar
- 1 tbsp Vanilla
- 1 egg + 1 yolk
- 2 cups Cinnamon chips
- 1/2 cup White sugar
- 3 tbsp Cinnamon

Step 1
Preheat oven to 325 F.
Line baking sheets with parchement paper.
In a medium bowl, whisk together flour, baking soda, and salt. In a seperate medium bowl, cream butter and brown sugar. Add vanilla and eggs into butter/sugar mixture. Blend wet and dry ingredients. Fold in cinnamon chips.
Roll dough into 1 inch balls. In a small bowl, mix white sugar and cinnamon. Roll balls in cinnamon sugar mixture. Place on cookie sheets about 1 inch apart, flatten slightly with the bottom of a small drinking glass.
Bake 15 minutes. Cool 5 minutes, transfer from pan to continue cooling.
