Frog Eye Salad

Acine de Pepe is a small, round pasta, hence the "Frog's Eye". No frogs were harmed in the making of this salad

Ingredients
- Dressing:
- 1 cup sugar
- 2 tablespoons flour
- 1/2 teaspoon salt
- 2 eggs, beaten
- 1 3/4 cups pineapple juice(from drained pineapple, if
- needed, use mandarin orange juice too)
- 1 tablespoon lemon juice
- Salad:
- 1 pkg Acini de Pepe pasta. -16 oz.
- 3 quarts of water
- 2 teaspoon salt
- 1 tablespoon (optional) oil
- 3 cans crushed pineapple (20 oz)
- 3 cans mandarin oranges (11 oz)
- 1 cup coconut
- 1 cup mini marshmallows
- 1 (9 oz) frozen whipped topping, thawed

Step 1
Dressing:
1. Combine sugar, salt and flour in medium pan
2. Gradually stir in eggs and pineapple juice
3. Cook over medium heat, stirring until thickened.
4. Add lemon juice
5. Cool mixture to room temperature
Salad:
1. In a large pot, bring water, salt and oil (if desired)
to a boil.
2. Add pasta
3. Cook at a rolling boil until done.
4. Drain, rinse with water, drain again and cool to
room temp.
5. Combine egg mixture and pasta; stir.
6. Add pineapple, oranges, coconut, marshmallows
and whipped topping
7. Mix well and cool thoroughly
