- 4 chicken thighs (about 1 lb)
- 4 chicken drumsticks (about 1 lb)
- Herb Marinade
- 1/2 cup vegetable oil
- 1/2 cup lime juice
- 2 Tbsp chopped fresh or 2 tsp dried basil leaves
- 2 Tbsp chopped fresh or 2 tsp dried oregano leaves
- 2 Tbsp chopped fresh or 2 tsp dried thyme leaves
- 1 tsp onion powder
- 1/4 tsp lemon pepper

Step 1
Mix all Herb Marinade ingredients together in a shallow glass or plastic dish or heavy duty resealable plastic food storage bag. Add chicken thighs and drumsticks; turn to coat with marinade. Cover dish or seal bag and refrigerate, turning chicken occasionally, at least 30 minutes but no longer than 24 hours.
Heat coals or gas grills for direct heat. Remove chicken from marinade; reserve marinade. Cover and grill chicken, skin sides down, 5 to 6 inches from medium heat 15 minutes. Turn chicken; brush with marinade. Cover and grill 20 to 40 minutes longer, brushing occasionally with marinade, until juice of chicken is no longer pink when centers of thickest pieces are cut. Discard any remaining marinade.
