Ingredients
- 6 large chicken brests
- 1/2 tsp salt
- 8 .oz goat cheese, softened to room temp
- SUNDRIED TOMATO SAUCE
- 2 tbs butter
- 2 tbs extra virgin olive oil
- 1/2 tsp black pepper
- 1 tbs finely chopped garlic
- 1 tbs finely chopped yellow onion
- 1/2 cup dry white wine
- 1/4 cup fresh squeezed lemon juice
- 10 tbs cold unsalted butter, in small pcs
- 1-1/2 cup finely sliced sundried tomatos
- 1/4 cup chopped fresh basil
- 1/2 tsp kosher salt
- 1/2 tsp white pepper

Step 1
Prepare tomato sauce. Place butter, garlic, onion in largeskillet over medium heat and saute untilgarlic and onion are tender and transparant. Add wine and lemon juice. Increase heat to medium-high and simmer to reduce by 1/2. Reduce heat to low. Add cold butter one piece at a time. Add sundried tomatos, basil, salt, pepper and stir to blend ingredients, set aside. CHICKEN: Reduce charcoal briquettes to white hot coals. Brush chicken withy olive oil and sprinkle salt and pepper. Grille chicken over hot coals for 15-20 minutes until cooked through. Divide Goat cheese evenly between breasts for last 2 minutes of cooking. Place chicken on plate and spoon tomato sauce over breasts.
