Ingredients
- Chocolate Syrup:
- 1/2 cup cocoa powder
- 1/2 cup sugar
- 1/2 cup brewed coffee
- 1 1/2 oz bittersweet chocolate (50-70 %) finely chopped
- Ice Cream Base:
- 2 cups whole milk
- 4 teaspoons cornstarch
- 1 1/2 oz (3tablespoons) cream cheese,
- softened
- 1/8 teaspoon salt
- cold water & ice as needed
- 1 cup heavy cream
- 1/2 cup sugar
- 2 tablespoon light corn syrup

Preparation
Step 1
1. In a small bowl, mix 2 Tbs. milk and cornstarch to
make smooth slurry.
2. Set aside.
3. In a medium bowl, whisk the cream cheese, warm
chocolate syrup mixture and salt.
4. Fill a large bowl with water and ice.
5. In a 4 qt. saucepan, over medium-high heat,
combine the rest of the milk, cream, sugar and corn
syrup.
6. Bring to a rolling boil and boil for 4 minutes.
7. Remove from heat and gradually whisk in
cornstarch slurry.
8. Return to heat, bring back to a boil, and cook,
stirring constantly, until thickened, about 1 minute. 9. Remove from heat.
10.Gradually whisk the hot milk mixture into the
cream cheese mixture until smooth.
11.Pour into a gallon Ziploc freezer bag and submerge
in the ice water.
12.Let stand, adding more ice as needed, until cold,
about 30 minutes.
13.Churn in ice cream maker until thick and creamy. 14.Freeze until firm, 4 hours
